Back to School Lunchtime Savings

When my daughter first started school, I would send a juice box in her lunch along with a bagged sandwich and snacks. The only thing that was re-useable was her lunch box. In her classroom, there would be unfinished juice boxes (from other students as well) on a countertop and some would still be there at the end of the day, meaning that they would get tossed out. Some still half full with juice in them. With the amount of juice and packaging that was being wasted, I decided to start using drink containers instead so that she could drink the amount she wanted and then close the cap and have another drink when she needed to. I also filled the drink container with just water instead.

Saving the environment and saving money at the same time was a huge bonus for us and I really noticed the difference by the end of the year.

Budget Friendly Freezer Burritos

Enjoy them immediately and freeze them for later too!    Beef & Bean Burritos Makes: 6 burritos INGREDIENTS 1 pound ground beef 2 tablespoons taco seasoning 6 flour tortillas 1 16-ounce can refried beans 1 cup shredded Mexican cheese blend PREPARATION 1. Add ground beef to a large skillet over high heat and sprinkle with taco seasoning. Cook, breaking up the meat, until browned. Drain the fat and set aside to cool. 2. Assemble the burritos by microwaving the flour tortilla for 20 seconds, and begin to layer burrito starting with refried beans, followed by the cooked beef and cheese. 3.
